Appalachian Stack Cake (Kentucky Stack Cake) |
If there is one dessert that screams Appalachia, itβs the Appalachian Stack Cake β sometimes called Kentucky Stack Cake. This humble but beautiful dessert dates back to the 19th century and was especially popular at mountain weddings. In the old days, wedding guests would each bring a thin layer of cake to contribute. The brideβs family would stack the layers high with spiced apple butter or dried-apple filling between them. The more layers, the more popular the couple! After resting overnight, the moisture from the filling softened the cake layers into a tender, almost molasses-cookie-like texture. Itβs still popular today throughout Eastern Kentucky, West Virginia, and Tennessee β especially around the holidays.
